Irish Apple Cake

Ingredients
  

Cake
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • 3 medium Granny Smith apples peeled, cored and cut into small chunks
Topping
  • 2 tablespoons demerara sugar or turbinado
  • ½ teaspoon ground cinnamon
  • custard or whipped cream for serving

Method
 

  1. Heat the oven to 350°F. Butter a 9-inch springform pan and line the base with parchment.
  2. Whisk the flour, baking powder, cinnamon and salt in a bowl.
  3. Beat the butter and sugar with a hand mixer until pale and fluffy, about 3 minutes. Beat in the eggs one at a time, then the vanilla.
  4. Add the flour mixture in two additions, alternating with the milk, mixing just until smooth. Fold in the apples — the batter will be thick.
  5. Spread into the pan and sprinkle with the demerara sugar and cinnamon.
  6. Bake for 45 to 55 minutes, until golden and a skewer comes out clean. Cool for 15 minutes before releasing the pan. Serve warm with custard or whipped cream.

Notes

Keeps covered at room temperature for 2 days. Rewarm slices in a low oven before serving.
